Tis The Season…. To Eat!!!!!!

I love food but I LOVE Christmas Food!!!!

My Death row meal (should I ever get there) is a Fresh White bread Sambo with real butter and Layers of Honey Glazed Ham, Sausage Meat Stuffing & Cranberry Sauce πŸ˜‹πŸ˜‹

I’ve Hosted Christmas Dinner twice, once for 11 People from my teeny Kitchen and it was a huge success, well so they tell me !! And another year I had 15 girls here for Kris Kindle Drinks that required some festive nibbles! So I’m no Stranger to feeding at this time of year! I’m going to share some Recipes, Tips & Ideas for a handy tasty and excessively Indulgent Christmas !!

So let’s get started with Starters!! Not essential in my opinion as the main is such a huge deal but if your planning on doing a starter I think it should be something that you can either pre make or pre prepare!!

My Fave is a Little Anti Pasti Tapas Style Starter it tastes great and needs no cooking and looks epic on an aul slate server!

They way I serve mine is with Slices of Fancy meat (as I call it) Serrano, Parma etc etc all hugely available this time of year along with slices of Posh cheese ! The one with the apricots in Lidl is my Fave! Then I fill little individual ramekins with Garlic Butter, Red Onion Relish, Pesto, Pate & Quince Paste I get all of these in Lidl! The main bit is the bread to pile it all on! Cheap as Chips Brioche Rolls again from Lidl 😝 They come in a bag we cut them in half and Toast them before serving Delish!!!

Another Option is Soup!!!

This Celeriac Soup is sooo Tasty and works perfect at Christmas Time!!

Add one Tablespoon of Butter to a large pot.

Add 2 Peeled,Washed & Finely Chopped Potatoes & 1 Medium Chopped Onion.

Sprinkle of Salt, Black Pepper, & Nutmeg.

Cook on a medium heat for about 5 Minutes.

Then add peeled Chopped Celeriac. Add chicken stock to ensure all veg is covered.

Bring to the boil then leave to Simmer on a medium heat for 15 mins. Blend to a consistency you like I add more hot water as necessary as I like it really smooth!

Then add 50ml of Fresh Cream. Sprinkle the Top with some Toasted Hazelnuts to Serve.

For something more Traditional,Honey Roast Veg Soup! Peel Wash and Chop

3 Carrotts

2 Parsnips

1 Red onion

2 Small or 1 Large Sweet Potatoes

When all veg is chopped toss in some olive oil and then sprinkle with a little Salt, Black Pepper, Garlic Powder, Cayenne Pepper (leave the cayenne out if you don’t want it to be spicy).

Roast in the Oven for a half hour

Remove the veg and add a good squeeze of honey and toss so all coated.

Back into the oven for another 10/15 mins

Pop all veg into a large pot then add stock enough to cover all the veg.

I used 1 veg and 1 chicken stock cube with boiling water.

Boil for 10 mins then Blitz to whatever consistency you like.

I personally prefer smooth soup so I keep adding hot water as I blend to give me the Consistency I want.

Both Soups Can be pre made & heated when needed!

QUICK IDEA: If you just want something super simple dunnes in the chilled section near the pre made salads etc do tubs of different colored melon balls which are lovely & look nice !

Now for the Main Meal!!! I don’t really Like Turkey therefore I don’t have a huge desire for cooking it so I Turned to Nigella!

BUT I love Ham and my Mam made THE BEST Honey Roast ham !! She boiled it in cider and cloves then roasted it in a divine Glaze!!!

If your looking for something a little easier but still super tasty why not turn to the Slow cooker for Honey Glazed Ham!!

To make the Glaze.

In a bowl combine

1.5 Tablespoons of Brown Sugar

1 Tablespoon of English Mustard

2 Tablespoons of Maple Syrup or Honey

You may need to add a little extra of each if it’s a really big ham!!

Pop the Ham into your slow cooker and cover in the glaze.

Save a little glaze from before so when its cooked spread a bit more all over the ham and pop in oven for 10/15 mins just to crisp up the edges 😍😍

Now for the Sides!!!!

Potato Gratin wasn’t something we ever had with our Christmas Dinner growing up, but Stephen did and now I love it and it’s super easy to make!!!

To make the Sauce Combine

300ml of Double Cream

250ml of Full Fat Milk

A Handful of Grated Parmesan

2 Heaped Tablespoons of Melted Garlic Butter.

Peel wash and Thinly Slice Potatoes ( 5 Medium Sized)

Rub Sides of an Oven Dish with a small amount of Butter.

Then Start Layering the dish with Potatoes then Sauce till the dish is full. Pop in the oven at 200 till brown on top and Bubbling approx 1 Hour.

The best part about Christmas Dinner is the Stuffing and this is my Recipe for Sausage Meat Stuffing! Add all of the following to a large mixing bowl:

1 Bag of Breadcrumbs 200gram

1 Roll of Sausage meat 450-500gram

1 Table Spoon of Yellow aromat.

1 Tsp of Black Pepper

1 Tsp of Parsley

1 Tsp of Normal Mustard

1 Tablespoon of Garlic Butter

1 Beaten Egg

No need for salt !!

1 Finely Chopped Medium White Onion.

Now you need some gloves and you need to combine the living daylights out of it all.

Shape into a Rectangular meatloaf shape.(The food not the singer πŸ˜‚) Wrap entirely in tinfoil no need to pre butter the tinfoil as the garlic butter in the stuffing does that for you.

Cook In the oven on 200 for approx 35mins then open the foil so it’s exposed and put it back in for about 10/15 mins till it looks nice and golden on top.

Slice as Thick or Thin as you Like the end bits are always the best!!!

This Re-heats really well in the oven or microwave

For a non Sausage Meat Stuffing how about Walnut Stuffing!

I made this in a food processor because sometimes I just like to use it πŸ˜‚

6 Slices of Bread

1 egg

1 Tsp of Parsley

1 Tsp of Black Pepper

1 Clove of Garlic

1 Handful of Walnuts

1 Tablespoon of Butter

1 Spring Onion

Into an oven dish then into a preheated oven for 10 mins stir then another 10 mins πŸ‘Œ

To make things easy on yourself turn to mash direct!! I haven’t made mash myself since I found them! 90% Real Potatoes from an Irish farm with some Milk, Butter (Milk), Salt, White Pepper.

They do all sorts of other veg aswell so handy!!! Dunnes, Super-valu etc all sell them!

Maple Roast Veg Super Tasty & Easy

I used Carrots & Parsnips didn’t peel just washed and roughly chopped!!

Par Boiled for 15 Mins then tossed in a little Olive Oil & A good drizzle of Maple Syrup and into the oven for about 20-30 Mins.

If you fancy cheating Aldi & Lidl have bags of frozen maple parsnips that are really lovely!!

For Roast Potatoes I’m sending you the king of Roast Potatoes Jamie Oliver ! He does a little trick with a potato masher that works amazing!!


Party Food & The Desserts!!!

Nothing Like a crispy wing smothered in hot sauce !!!

I love wings and I’ve managed to make a version at home that almost lives up to my faves!

We buy packs of raw wings from Dunnes or Supervalu and take the tip off (we had to youtube this the 1st time)

This Recipe is based on One pack of Wings.

Coat Raw wings In 1.5 Tablespoons of Olive Oil

2 Tablespoons of Cornstarch

A sprinkle of Onion Salt & A sprinkle of paprika or cayenne pepper.

They can me prepared like this and kept in the fridge till later or straight into the Actifry, Oven or Deep Fat Fryer till crispy! We use the Actifry.

The Sauce:

In a pot put

Half Bottle of Franks Hot Sauce

1 Table Spoon of Brown Sugar

1 Table Spoon of Butter

Squeeze of Honey

Few Splashes of Soy Sauce

Leave on low heat to simmer stirring occasionally while the wings are cooking. When the wings are cooked combine with the sauce in a big bowl and toss to coat fully we keep a little sauce for dipping Tortilla Chips into.

I lay a load of Tortilla chips on a oven tray sprinkle with grated cheese and pop under the grill for a few mins!

Sticky Salty Sausages without doubt the most popular Recipe I’ve ever shared ! I had a Lady message me to say in her house they are now called Frilly Flausages πŸ˜‚πŸ˜‚πŸ˜‚

I’m gonna be honest they are something else and I’ll be doing a big batch of Cocktail ones to have xmas night with the Sambo’s and Drinkies

This Glaze would be for 12 breakfast size sausages or about 36 cocktail sausages

In a bowl combine:

1.5 Tablespoons of Honey

1 Tablespoon of Brown Sugar

Sprinkle of Yellow Aromat

10 Dashes of Soy Sauce

1 Tablespoon of Olive Oil

Coat Sausages in the Sauce and cook in the oven at 200 till cooked and glazed approx 35/40mins

Cheesy Garlic Pull apart Bread!

I buy a loaf of cob bread

Cut across diagonally deep into the bread but not right to the bottom to make the gaps.

In a bowl combine a handful of

Grated Mozzarella , Grated Cheddar, Grated Parmesan and a table spoon of Italian Herbs

Stuff the gaps with the cheese and herb mixture.

Melt two tablespoons of garlic butter in the microwave for a few seconds then drizzle that all over the stuffed bread.

Put into a pre heated oven at 200 for about 25/30 mins covered lightly in tin foil! Sooo nice with the Sausages and Wings!!!

The Sweet Stuff

Ridiculously Indulgent Chocolate Biscuit Cake

1.5 Packets of Digestive Biscuits or Oreos bashed up (I usually use the own brand ones)

2 Kinder Buenos Or Crunchie whatever bars you like or what’s on special!!

1 bag of share size either munchies/rolo/dime bar pieces /malteasers whatever ya fancy really.

Pop All into a freezer bag and bash them with a rolling pin or an empty bottle of wine πŸ˜› till they are rubble.

Melt together 2 Large Bars of Chocolate of Choice I usually use the Galaxy Caramel

1 Bar of Cooking Milk Chocolate & a Tablespoon of Butter.

Combine your rubble and melted chocolate then add a full tin of Caramel and mix(Dunnes sell this on the coffee Aisle and Aldi do their Own Version)

Pour into a baking tin lined with cling film so you can pull it out!

Pop it into the fridge for the night I usually pull it out and cut into chunks when set 😍😍

Sticky Toffee Pudding with a Baileys Salted Caramel Sauce!!! Serves 6/7

Get two mixing bowls

In bowl 1 mix together:

190gram of Self Raising Flour

1&1/2 Tsp of Bicarbonate Soda

120gram of Soft Brown Sugar

Pinch of Salt

In bowl 2 mix together:

130ml of Milk

1 Teaspoon of Coffee granuals dissolved in boiling water just enough boiling water to dissolve the coffee.

6 Table Spoons of Melted Butter

1 Tsp of Treacle

2 Tsp of Vanilla Extract

2 Eggs

Combine the Wet & Dry bowls of stuff and mix together.

Pour into a cake tin greased with butter and cook in a pre heated oven for 20 mins at 170c.

The Sauce.

You will need a nice big pot and a blind eye to the ingredients!!

Pop all of the following into the pot on a low heat till the sugar is dissolved then up the heat to medium for 5 mins till it’s dark & thicker!!!

200g Unsalted Butter Chopped up.

350g Soft Brown Sugar

250ml Double Cream

1 Tsp of Salt

4 Tablespoons of Baileys

I stuck a few holes in the cake when it was cooked then poured some sauce over so it went into the cake .

Then more sauce over when serving.

Both cake & sauce can be pre made and heated in microwave no bother.

A Nigella Classic!!! Salty & Sweet Bars perfect as bitesize pieces!

3 Large bars of melted chocolate I use the large galaxy caramel bars

Melted with 3 Tablespoons of Butter in the Microwave.

Beat 4 Crunchie Bars to rubble

In a bowl combine the melted Chocolate ,Crunchie Rubble & a bag of Salted Peanuts if there’s a peanut Allergy use broken pretzel pieces. Add a tablespoon of Maple Syrup.

Cover an Oven dish or cake tin in cling film and pour the mixture in.

Leave Overnight in the fridge and then pull the cling film to pop it out. Cute in chunks & enjoy!

I started making this Chocolate Chip Walnut Banana Bread this year and it would be lovely to make Christmas Eve and have with Breakfast Christmas morning or would be really nice to bring along if your visiting people over Christmas !!
